The Harvest
What makes our oil have award-winning quality?
The short answer is Our Olives.
They come from centenary old trees. Some older than 230 years. And unlike younger trees that produce softer olive varieties that tend toward a sweeter, gentler profile, our Cornicabra olive trees give the oil greater structure and presence.
Its flavour is intensely fruity and aromatic, with fresh green notes, a balanced bitterness and a distinctive peppery finish that lingers on the palate.
It is an oil that does not simply accompany food, it becomes part of the dish. For us, that balance between fruitiness, bitterness and spice is what makes Cornicabra so remarkable: complex enough to stand on its own, yet versatile enough to transform everything from a simple piece of bread to a carefully prepared meal.
But our olives are the product of more factors..
The Region
There is something distinctive about the climate of Montes de Toledo. In the heart of Spain's interior, where the Tagus and Guadiana basins meet a landscape of rolling hills and mountain ranges, the olive trees experience long, dry summers, cold winters and pronounced changes in temperature between day and night. It is a demanding continental climate, far removed from the mild conditions often associated with the Mediterranean coast. These contrasts slow the rhythm of the season and create the distinctive growing conditions in which Cornicabra has adapted and flourished for generations.
The Land
Our land carries a colour of its own. Deep red Mediterranean soils lie beneath the olive groves, shaped by their mineral composition and geological origin. Across these soils, variations in potassium, calcium, magnesium, carbonates and organic matter create a remarkably distinctive foundation. This is not simply the colour we see beneath our feet; it is a defining characteristic of the earth itself — a red soil with its own composition, its own identity, and its own place in the story of our oil.
The Care
Sustainability is not something new for us. It is something we inherited. For generations, our family has cared for these trees by understanding what they need rather than forcing them to produce. We know that caring for an olive tree does not have to mean relying on harsh chemicals or synthetic pesticides. It means knowing the land, observing the trees, understanding their natural cycles and remembering the practices our ancestors used long before modern agriculture had a name for them. We choose to preserve that knowledge, using responsible, organic farming practices and avoiding synthetic pesticides. And that way we are able to have some of the oldest Olive Trees in Spain, still producing olives after 230 years.

Our value lies in the quality of what is inside the bottle. Because our oil is made through a natural, carefully controlled and traditional process, we have every reason to show you exactly what you are consuming.
Every bottle is linked to a specific harvest and production batch, allowing us to trace its journey from our olive groves in Gálvez, Toledo, to your table. And rather than asking you to simply trust our claims, we give you the information to verify them.
Inside every JUSTI box, you will find a certified laboratory report corresponding to the oil inside your bottle showing its measured composition and key quality parameters, and attached to the neck of every bottle, your unique Oil ID connects your bottle to its harvest and allows you to access its nutritional and analytical information including the values that define the oil you are consuming.
CERTIFIED SERIAL NUMBER
For La Primera, our limited Collector's Bottle, each bottle comes with a numbered certificate identifying its individual place within the collection.
