A Story Five Centuries in the Making
Gálvez, Toledo - Castilla La Mancha, Spain. Since 1483
Before we even had a name, there was a piece of land, a family and a tradition passed from one generation to the next.
Right now, at the heart of our family is Justina.
Justina Oropesa - 91
Justina belongs to a generation that understood food differently.
They didn’t overcomplicate food.
They knew exactly the ingredients and what they were using to prepare them.
And when it came to Olive Oil, they harvested and milled it themselves, and did not need a label to tell them it was great.
They just knew.
We named our brand after her because she represents what we believe should never be lost.
500 years
of Tradition
Olive cultivation in the Montes de Toledo dates back to antiquity.
Introduced to the region during the Phoenician and Greek colonizations, it developed considerably under Roman rule. Centuries later, the olive remained part of life in the Toledo region through Muslim, Jewish and Christian communities.
By the time the first Spanish voyages reached the Americas, olive oil already had a long history in the lands around Toledo.
Historical records dating from 1415, document olive groves in municipalities that form part of the area now protected by the Montes de Toledo designation, and right after that, in 1488, Gálvez was formally stablished as a Village formed by the surrounding Olive Harvesting Communities.
And 538 years later we still produce one of the highest quality Olive Oils in the World.
In the region of Montes de Toledo, olive oil has been part of life for centuries before the United States of America became the country we know today.
Through centuries of change, the olive tree always remained.
For generations, the oil produced in this region was something exclusively local.
It belonged to the families, tables and communities that surrounded the olive groves.
And even though oils from this region have been recognized among the finest produced in the world, they remained primarily a local treasure.
But we have always believed that something this good should not have to remain a secret of its own corner of Spain.
From Gálvez, Toledo, to tables across America, our purpose is simple:
To share a product of extraordinary quality while remaining connected to the land, the people and the traditions that made it possible.
